How to choose the best tawa for your kitchen?
Making a firm dosa to the appropriate extent of crispness can be a hard challenge at home until you use a high-quality dosa tawa. A dosa tawa is significantly associated with differences from regular tawa and thus, a well-designed tawa needs to be used to apply your special technique and enhance the texture of the dosa.
The material of the tawa is an important factor to decide the characteristics associated with it. Anodised aluminium tawa is associated with the property to resist corrosion as the aluminium is electrolysed in an electrolyte bath. It is an excellent conductor of heat and is suitable for a long-lasting dosa tawa. Cast Iron is heavy and is associated with a persistent heating effect making it durable for an extended time with its natural nonstick coating. Aluminium on the other hand is light and easy to handle. It works well for non-alkaline and non-acidic food items. Thus, the material can be used in a dosa tawa extensively.
The size of a tawa plays a major role and is an important factor considering the area of the food item we want to cook over it. The size of tawa in the market ranges from 8-16 inches. Since dosa is larger in area, a tawa with a greater diameter will serve appropriately for making a firm and evenly-shaped dosa as the batter will be able to stretch equally on all sides.
A high-quality non-stick material in a tawa is ideal for making dosas as well as chapatis and omelettes because it helps in enhancing the crispness of the dosa by avoiding the batter from sticking.
A tawa should have a heat-proof handle to cook easily and safely without burning your hands even when the tawa is extremely hot.

How to maintain tawa for longer life
After making sure that you have purchased a good quality non-stick tawa for making crispy and tempting dosas, you need to make sure that they last long. So how will you do that? What are the things you need to protect? The non-stick coating that is responsible for the reduction of oil used and the prevention of sticking of food to the base, needs to be protected.
Pots or pans should not be piled over the non-stick tawas. The manual that comes with it should be read carefully to know about the seasonings and maintenance to prolong life. Handwashing the tawa should be preferred over dishwashing to prevent stacking of detergent. A non-stick scrub sponge should be used instead of abrasive hard and rough cleansers to prevent scratches. Wood or plastic spoons should be used rather than steel spoons to prevent the peeling of the non-stick coating. Lukewarm water should be used while washing it. Since these tawaz are sensitive to high heat because of the damage caused to the non-stick coating, these should be used at a low or medium heat setting. Acidic food like tomatoes and lemons should be refrained from cooking as these are known to destroy the non-stick coating.
